Made sponge and left out at room.
Tues, Jan 21st @ 03:30 : put in fridge
Wed, Jan 21st @ 00:08 : back out on bench
02:48 : starting the mix now initial temperature 67°
03:01 : adding the oil now at 78°
03:04 : adding the salt now. Somehow the dough has cooled down to 77°
03:08 : step to the max and I'm going to transfer to a bowl. Rest for 15 minutes and fold then rest for another 15 minutes just like I did with the the last batch.
03:51 : All balled up and in the fridge
Wed, Jan 21st @ 20:22 : transferring to freezer all but 1, which is going on the bench to eat tonight

Fri, Jan 23rd @ 00:00 : transferred from freezer to fridge will start ferment time at 8:00
Sat, Jan 25th @ 20:30 : got out at room
Sat, Jan 25th @ 23:00 : oven started
Sun, Jan 25th @ 01:09 :just made the pizza. So good extra chewy and flavorful

Mon, Jan 26th @ 17:20 : got the dough ball out from the freezer and put it on the counter.
Mon, Jan 26th @ 23:20 : started the oven to pre heat.
Sun, Jan 27th @ 02:20 : made the pizza
Pizza was great, but not remarkably different enough to the first two to warrant any pictures etc.
