Thu, Feb 19th @ 04:06 : Made the first half of the sponge and it now sits at room.
Thu, Feb 19th @ 14:17 : made the rest of the sponge.
19:04 : started the mix now. The temperature is 73° already so I think I'm going to put the jacket around it
19:13 : The temperature is 77° so I'm going to start slowly introducing the oil
19:15 : I'm also going to combine the salt just because this shit is sticking on flapping around in the mixer The temperature is still 77ish° possibly because the oil is cooled it down a little bit
19:21 : okay, time for the first rest before a fold. The dough temperature is 78.8°
20:09 : The dough balls are now balled up on in the fridge
Fri, Feb 20th @ 22:58 : transferred four of the balls from the fridge to the freezer and I'm leaving one out at room so that I can eat it later tonight

Sat, Feb 21st @ 00:30 : start at the oven on 5:50 with both steels on the top shelf.
03:11 : and she's in the oven
03:18 : and now she's finished. To be honest, I'm not overly impressed with it. I think that this batch might have fermented a bit too quickly. In retrospect, I accidentally went a tiny bit overboard with the yeast, so I feel like the rows all together too quickly. I also think that knocking back the acerola Cherry for just plain white flour that I'm using is probably a good bet as well. I think it's making it a little bit denser than I'd like. We'll see. I'm about to put it in my mouth

To be honest, I didn't even bother logging much after that first pizza. The batch as a whole was slightly underwhelming. Not sure exactly where I went wrong, but have a hunch that it's either:
1. The sponge was left out at room for FAR too long.
2. The acerola cherry was not the right amount.
3. A combination of both of these things
Still very edible, just not god batch.
