Thu, Nov 27th @ 00:50: Made the sponge and tis now sitting at room temp.
03:30 : Put her back in the fridge f
15:57 : Took her back out to ferment at room for a wee bit.
18:22 : started the mix
18:30 : adding the oil now. The temperature of the dough is 75°
18:34 : added the salt. The dough is 78.5
18:36 : The dough is now resting at room temperature for 20 minutes. The final dough temperature is 79°
19:21 : the balls are in the fridge.
Fri, Nov 28th @ 23:17 : got the first doughball out at room. I left one in the fridge as none of them seem like they were in danger of outgrowing their containers. 3 went in the freezer simply because I won't be making 3 pizzas in 2 days.

Not bad at all, lovely crumb and taste. Feels a little softer than very recent batches.
## Katrina Woodley The Second:
Sat, Nov 29th @ 23:33 : got the ball out.
Sun, Nov 30th @ 00:34 : started the oven
02:03 : starting to make the piece now. The dough is 65°

Mon, Dec 1st @ 00:30 : got ball out of freezer and into fridge for slow thaw.
Tue, Dec 2nd @ 23:18 : out at room
Totally forgot to put the entry in for this but it was a decent pizza

Sun, Dec 7th @ 19:17 : got the fourth ball out now and I'm quick defrosting it in 95°
Mon, Dec 8th @ 03:36 : finally in the oven. That's a whopping 8 hours bench, and it came out rather nice
