The temperature of the dough is 75° 18:34 : added the salt. The dough is 78.5 18:36 : The dough is now resting at room temperature for 20 minutes. The final dough temperature is 79° 19:21 : the balls are in the fridge. Fri, Nov 28th @ 23:17 : got the first doughball out at room. Sun, Nov 30th @ 00:34 : started the oven 02:03 : starting to make the piece now.
