Thu, Mar 26th @ 03:49 : Made the first half of the sponge, left at room for the short amount of time before I go to bed.
05:00 : put in fridge
Thu, Mar 26th @ 12:30 : got the half sponge out at room for a wee bit.
17:33 : added the other half, going to give another hour or so at room.
20:31 : back in the fridge he goes to cool down more than anything so that I can extend the mixing time
Sat, Mar 28th @ 00:38 : got sponge out in preparation of mixing
03:07 : okay, I just popped it back in the freezer momentarily just to bring it down a few notches before I start the mix
03:25 : mix started.. The initial temperature is 62°
03:39 : I'm going to start adding the butter slowly The temperature is 74°
03:43 : and now I'm going to add the salt. At 75.5°
03:45 : I'm now at 78°. I'm going to rest it for a single 20 minutes
04:27 : into the fridge they go
Sun, Mar 29th @ 00:30 : 3 balls transferred to freezer, 2 staying in the fridge.

#### Notes:
I also used a small personal fan to blow some cold air over the dough as it was mixing
After a while the dough started to climb up the middle pillar and became really elastic, but after resting it for 20 minutes. It was super easy to work with but felt mega soft. I think the longer mix time is just what this formula needs
