My name is Antonio Rollon, welcome to my DoughJo. if you are looking to improve your pizza game, you need to keep a dough journal , and you will find all mine in the Doughjo.

Even though I started this site merely as a way to upload the dough journals so people can see how I approach the process, you can find other things on this site including insights into the research I do for all things pizza and the resulting notes I take and use for video scripts.
If you watch my [Channel](https://www.youtube.com/@rollonfood) then you’ll be able to see, in real time, every formula I am working on, every concept I am trying to develop and all the fails along the way, as I am working on them. So if you have a question, or even objection to something you see in a video, chances are you can delve even deeper into the subject here.
The current method, and application, that I am using to write my ideas, notes, scripts, research and just general musings is going to allow me to update the content of this site, especially the doughjos, thoroughly and regularly.
